Product Spotlight: Fire Ox Foods Frozen Meals

Lately, I’ve been eating a lot of meat and carbs and I’m thinking a lot about incorporating more vegetables into my diet. Life has been busy, and the dishes that are convenient for me are always dominated by meat and carbs, whether it’s a quick grilled cheese sandwich or a simple pasta. Luckily, I found quick and easy frozen meals from Fire Ox in our Co-op. These vegan, low-gluten and nut-free meals are not just quick to prepare, they’re filled with vegetables and will give you the ease of a frozen meal without the guilt.

Fire Ox’s mission is to help people eat more vegetables and help the planet while doing it. This is reflected in their five meal varieties, each containing one to four servings of vegetables. These five options ($6.50 each at the Co-op) feature a wide selection of cuisines,including mushroom oat risotto, chipotle red bean pozole, Massaman coconut curry, Provençal ratatouille and braised Ethiopian greens. These meals are really easy to prepare and come with a recyclable, microwave-safe container. One of them iis filling enough for lunch; which is great, considering that most of the frozen meals I’ve bought in my life never make me feel full.

You can eat a Fire Ox meal by itself for lunch or dinner, or you can incorporate it into other dishes! I incorporated half of the mushroom oat risotto as a side dish for my steak au poivre dinner, and used the rest of it to complement my toast and eggs brunch the next day.
